White Citrus Witbier All-Grain Recipe Kit brews 5 gallons of pale, hazy Belgian-style witbier with soft wheat body, low bitterness, bright orange-citrus lift, gentle coriander spice, and a refreshing finish.

White Citrus Witbier is built for brewers who want a classic Belgian wheat beer rather than a hop-forward American wheat. The malt and wheat create a light, silky base, Saaz keeps the bitterness restrained, late orange peel and coriander give the beer its snap, and LalBrew Belgian Wit dry yeast brings the soft fermentation character that defines the style.

Flavor and Brewing Character

Expect a very pale beer with natural haze, a soft wheat-driven mouthfeel, restrained noble-hop bitterness, and a lively citrus-spice aroma. Coriander and bitter orange peel are added late so they stay bright instead of becoming cooked or perfumy. Fermenting in the mid-to-upper 60s °F keeps the Belgian yeast character expressive without letting it become harsh.

  • Sanitation matters most after chilling: anything touching cooled wort or beer should be cleaned first, then sanitized.
  • Measure partial-pack additions: Saaz, coriander, and orange peel are supplied in practical packs; use the specific brew-day amounts listed in the instructions.
  • Keep spice additions late: add 0.5 oz crushed coriander and 0.75 oz dried bitter orange peel with 5 minutes left in the boil for bright witbier aroma.
  • Control fermentation: start around 66–68 °F and avoid hot swings that can create rough phenolics or solvent-like notes.
  • Package only after gravity is stable: confirm fermentation is complete before bottling or kegging.
