White Citrus Witbier Recipe Kit | Extract | 5 Gallon
White Citrus Witbier Extract Recipe Kit brews 5 gallons of pale, hazy Belgian-style witbier with soft wheat body, low bitterness, bright orange-citrus lift, gentle coriander spice, and a refreshing finish.
White Citrus Witbier is built for brewers who want a classic Belgian wheat beer rather than a hop-forward American wheat. The malt and wheat create a light, silky base, Saaz keeps the bitterness restrained, late orange peel and coriander give the beer its snap, and LalBrew Belgian Wit dry yeast brings the soft fermentation character that defines the style.
This is the extract version. Prefer the other brew-day format? See the White Citrus Witbier all-grain recipe kit.
Why Brewers Choose This Beer
Brewers choose White Citrus Witbier when they want a bright, approachable wheat beer with real Belgian-style character. It is light enough for warm-weather drinking, flavorful enough to stand apart from a plain blonde or wheat ale, and forgiving enough for newer brewers when sanitation, fermentation temperature, and spice timing are handled carefully.

Grain Milling

Fermentation Requirements
Recommended fermentation temperature: 64–70°F. Steady ale fermentation temperature helps prevent hot, solvent-like, or overly fruity off-flavors.
Detailed Kit Contents
- Bavarian Wheat: 2 packages of 3 lbs.
- Flaked White Wheat: 8 Ounces
- Muslin Steeping Bag: 1 Bag
- Saaz Hops: 1 Ounce
- Coriander Seed : 1 oz | Essential Spice for Brewing & Distilling: 1 oz
- Dried Bitter Orange Peel - 1 oz: 1
- LalBrew Belgian Wit dry yeast: 1 Sachet
Flavor and Brewing Character
Expect a very pale beer with natural haze, a soft wheat-driven mouthfeel, restrained noble-hop bitterness, and a lively citrus-spice aroma. Coriander and bitter orange peel are added late so they stay bright instead of becoming cooked or perfumy. Fermenting in the mid-to-upper 60s °F keeps the Belgian yeast character expressive without letting it become harsh.
What Is Included
- Briess Bavarian Wheat Dry Malt Extract — 6 lb total (2 × 3 lb packs)
- Flaked White Wheat steeping grain — 8 oz
- Muslin Steeping Bag 5 x 15 in — 1
- Saaz hops pellets — 1 oz
- Coriander Seed — 1 oz pack; use 0.5 oz at 5 minutes
- Dried Bitter Orange Peel — 1 oz pack; use 0.75 oz at 5 minutes

Why Brewers Choose the Extract Version
This extract version keeps the brew day shorter while preserving the character that matters: wheat-based DME, a small flaked-wheat steep, noble hops, coriander, bitter orange peel, and expressive witbier yeast. The included Muslin Steeping Bag 5 x 15 in keeps the steeping step clean and beginner-friendly.
Brewing Notes
- Sanitation matters most after chilling: anything touching cooled wort or beer should be cleaned first, then sanitized.
- Measure partial-pack additions: Saaz, coriander, and orange peel are supplied in practical packs; use the specific brew-day amounts listed in the instructions.
- Keep spice additions late: add 0.5 oz crushed coriander and 0.75 oz dried bitter orange peel with 5 minutes left in the boil for bright witbier aroma.
- Control fermentation: start around 66–68 °F and avoid hot swings that can create rough phenolics or solvent-like notes.
- Package only after gravity is stable: confirm fermentation is complete before bottling or kegging.
