Sour & Wild Beer Recipe Kits

Sour and wild beers are some of the most complex and flavorful styles in brewing, featuring tart acidity, funky aromas, and unique fermentation characteristics. These beers have a deep-rooted history in Belgium and Germany, traditionally fermented with wild yeast strains like Brettanomyces and acid-producing bacteria such as Lactobacillus and Pediococcus. Modern craft brewers have expanded on these traditions, creating a wide range of tart, fruit-infused, and barrel-aged variations, including kettle sours, which allow brewers to achieve bright acidity in a fraction of the time.

Our Sour & Wild Beer Recipe Kits include both extract and all-grain options, developed by SoCal Brewing Supply and our brewing collaborators. Many of these recipes are award-winning, ensuring authentic and high-quality results. Sour beers often require extended aging or mixed fermentation, while kettle-soured beers can be brewed and enjoyed in just a few weeks.

Popular styles include Berliner Weisse, a light, wheat-based German sour ale with bright, lemony tartness; Gose, a refreshing sour wheat beer with hints of salt and coriander; and Lambic, a spontaneously fermented Belgian beer known for its deep funk and aging potential. Flanders Red and Oud Bruin balance rich malt character with lactic acidity, while American Wild Ales push boundaries with fruit additions and barrel aging. Kettle sours, such as fast-fermented Berliner Weisse and Gose, offer a quicker way to achieve tart, refreshing results without extended aging.
