Smoked Malted Grains for Beer Recipes
Smoked malted grains add smoke character to beer through malt that has been dried or kilned with smoke exposure. Depending on the malt and recipe, that character can read as soft wood smoke, campfire, bacon-like smoke, earthy phenolics, or intense peat. A little can add background complexity; a larger percentage can define the beer.
Use smoked malt with intention. Rauchbier and smoked porter can carry a stronger smoke profile, while brown ales, stouts, Scotch ales, and experimental beers often need a lighter hand.
