Weyermann® Oak Smoked Wheat Malt
Weyermann® Oak Smoked Wheat Malt is a distinctive German smoked wheat malt made from wheat that is gently smoked over oak wood. The result is a grain with soft wheat character, a pale color in roughly the 1.7 to 2.8°L range, and a smoke profile that is noticeably different from classic beechwood-smoked malt. Oak smoke tends to come across a little rounder and smoother, with an elegant rustic character that can add depth without turning harsh or ashy.
How brewers use it
This malt is a natural choice for Grodziskie and other smoked wheat beers, but it is also useful anywhere you want a cleaner, more refined smoke note. It can bring a subtle smoky edge to wheat beers, farmhouse ales, saisons, amber lagers, and creative specialty beers. Because it is wheat-based, it also supports body and foam while contributing its smoke character.
If you have used beechwood-smoked malt before, this is worth trying when you want something a little different: less campfire punch, more soft oak smoke woven into the malt profile.
What to expect in the glass
- German oak-smoked wheat malt
- Typical color range: 1.7 to 2.8°L
- Flavor profile: soft wheat malt, gentle oak smoke, lightly rustic character
- Useful for smoked wheat beers and for layering smoke into other styles
Good fit for recipe design
Oak Smoked Wheat Malt works well when you want smoke to be part of the beer rather than the only thing you taste. It can be the feature malt in traditional smoked wheat styles or a supporting ingredient that adds nuance to a broader grain bill. Pair it with clean lager strains, expressive saison yeast, or classic continental hops depending on the direction you want to take the beer.
