Calrose 70% Polished Rice for Sake Brewing
Calrose sake rice is a practical California-grown rice option for home sake brewing. This rice is polished to a 70% seimai buai, meaning roughly 30% of the outer grain has been milled away before brewing use.
A 70% polish is a useful starting point for brewers making junmai-style sake, honjozo-style sake, test batches, and approachable home sake recipes. It gives you a cleaner brewing rice than ordinary table rice while staying affordable enough for learning the process, making koji rice, building the moto, and feeding the moromi.
Product details
- Rice type: California Calrose rice for sake brewing.
- Polish: 70% seimai buai.
- Formats: sold by the ounce for small recipe builds or as a 50 lb bag for larger batches.
- Use: pair with koji, sake yeast, water, and your recipe's acidification or fermentation plan.
How to use it
Use this rice anywhere your sake recipe calls for polished brewing rice: koji rice production, the yeast starter stage, and staged additions during fermentation. Rinse, soak, drain, steam, and cool according to your recipe. Sake rice handling is more precise than ordinary cooking rice, so measure soak time, steam time, and temperature carefully.
For the rest of the ingredient build, use Koji Kin, browse sake yeast and koji, or shop the full sake making collection.
