Weyermann® Dark Wheat Malt
Weyermann® Dark Wheat Malt is a German wheat malt made for brewers who want the soft texture and head retention of wheat along with more color and malt depth than pale wheat can provide. Produced in Germany and typically around 6.1 to 8.1°L, it contributes a deeper golden to amber color along with bready, lightly toasty wheat character and a fuller, creamier palate.
It is especially useful in recipes where standard wheat malt feels a little too light or neutral. Dark Wheat helps add body and a more developed malt profile while still keeping that smooth wheat contribution brewers expect.
Best uses in brewing
This malt is a natural fit for Dunkelweizen, Weizenbock, dark wheat ales, and other wheat-forward beers that need more color and complexity. It can also be used in smaller portions in altbier, bock, and specialty ales when you want a touch of wheat character, improved foam, and a little extra malt richness without moving into roasted territory.
Compared with pale wheat malt, the flavor here is more rounded and more developed, with notes of fresh bread, light toast, and gentle malt sweetness.
What it adds to the finished beer
- German wheat malt with deeper color than pale wheat
- Typical color range: 6.1 to 8.1°L
- Flavor profile: bready, lightly toasty, smooth wheat malt character
- Helps support body, foam stability, and a creamier mouthfeel
Good buying guidance
If you are formulating a wheat beer and want more depth than standard white wheat or pale wheat brings on its own, Dark Wheat is a smart upgrade. It gives wheat-driven beers a fuller, more traditional malt impression while still staying clean and brew-friendly. For Dunkelweizen and similar styles, it is one of the most useful specialty wheat malts to have on hand.
