Crisp Finest Maris Otter® Ale Malt
Crisp Finest Maris Otter® Ale Malt is a classic English heritage base malt for brewers who want a richer malt foundation than a neutral pale malt can provide. Made by Crisp Malt from Maris Otter®, a traditional two-row barley variety, it brings the familiar English malt character behind bitters, pale ales, porters, stouts, strong ales, and other malt-driven beer styles.
Use it when the base malt should be part of the flavor, not just a source of fermentable extract. Crisp describes Finest Maris Otter® as wonderfully sweet, easy to brew with, and known for the characteristic malt body that has kept Maris Otter® relevant for more than 50 years. In the glass, expect rounded biscuit malt, baked bread, light toffee, and a fuller English ale impression that supports both traditional hopping and modern hop-forward recipes.
Why Brew with Crisp Finest Maris Otter®?
- Classic English base malt character: richer, breadier, and more expressive than a very neutral domestic two-row malt.
- Heritage barley identity: Maris Otter® is a long-established British malting barley variety bred from Pioneer and Proctor.
- Strong style range: excellent for ordinary bitter, best bitter, ESB, English pale ale, mild, brown ale, porter, stout, barleywine, golden ale, and malt-forward IPA.
- Flexible grist use: suitable as the full base malt up to 100% of the grist, or as a character base blended with crystal, roasted, wheat, or adjunct malts.
- Brewer-friendly performance: a reliable base malt with enough enzymatic strength for normal all-grain brewing and enough flavor to make simple recipes taste complete.

How to Use It
For a traditional English ale, build the grist around Crisp Finest Maris Otter® and let specialty malts play supporting roles. A simple bitter, pale ale, mild, or porter can start with this malt as the main base, then add crystal malt, chocolate malt, roasted barley, wheat, or flaked grains depending on the style. It is also a strong choice for American-style beers when you want a more substantial malt backbone under citrus, pine, floral, or earthy hop character.
Mash it like a standard base malt. A single infusion around 148–154°F works well for most ales: lower for a drier, more fermentable beer; higher for more body and malt roundness. Because this malt already contributes depth, avoid overloading crystal malt unless the recipe specifically calls for a sweeter English profile.
Finest vs. Other Maris Otter Malts
Crisp Finest Maris Otter® is the dependable all-purpose version: rich, traditional, and suitable for everything from everyday bitters to strong dark ales. If you want a paler grist with lighter color, compare it with Crisp Extra Pale Maris Otter Malt. If you want a more old-school floor-malted expression, see Crisp No. 19 Maris Otter® Malt.
