Briess Midnight Wheat Malt for Deep Color with a Smoother Roast Edge
Briess Midnight Wheat Malt is a dark roasted wheat malt used when brewers want very deep color without as much harshness as some traditional dark barley malts can bring. It is especially useful in black IPA, schwarzbier, porter, stout, and other styles where color matters, but the beer still needs to stay relatively polished and drinkable.
Because it is wheat-based, Midnight Wheat is often chosen when brewers want black color and restrained roast rather than a sharp burnt edge. That makes it a practical tool in recipes where hops, fermentation character, or overall balance should remain more visible than they would with a heavier-handed dark grain.
What It Contributes
