Red Star Premier Classique is the modern name for the yeast many winemakers knew as Montrachet. It is a dependable dry wine yeast for full-bodied reds, rose, white wines, fruit wines, and traditional wine styles where a quick start and complete fermentation are important.
Premier Classique is especially useful for Bordeaux-style varietals, barrel-influenced wines, and fermentations where you want solid structure without a highly aromatic yeast signature. It can make clean, expressive wines, but it should be given enough nutrient support to avoid stressed fermentation, especially in low-nutrient musts.
