Pacific Gem is a high-alpha New Zealand variety released in 1987. It can be used early, but its character is more interesting when late additions let its oak-like berry and currant notes show.

Expect citrus, woody oak, berry, currant. Because the alpha is high and the cohumulone can be firm, use it thoughtfully for bittering and lean on late additions when the goal is aroma rather than sharp bitterness.
