Lalvin ICV D80™ (often called D-80) is a premium dry wine yeast selected in the Northern Rhône for fermentations with high sugar and high polyphenols. It’s best known for building structure in red wines—adding fore-mouth volume, a bigger mid-palate, and intense, fine-grain tannin expression with ripe fruit and subtle smoky/licorice notes.
