German Doppelbock All-Grain Recipe Kit for Rich Bavarian Lager Character
German Doppelbock is a strong, malt-driven lager built around deep Munich malt flavor, smooth strength, and patient cold conditioning. This 5 gallon recipe kit is designed for brewers who want a rich amber-brown lager with bread crust, toast, caramel, subtle dark-malt depth, and clean German fermentation character.
This updated kit uses Fermentis SafLager W-34/70 dry lager yeast in both the all-grain and extract versions. W-34/70 is a classic, reliable German lager strain for clean fermentation, strong attenuation, and easier shipping than liquid lager yeast. No ice pack is needed because the yeast is dry.

Fermentation Requirements
- Pitch all 3 included W-34/70 sachets into well-chilled wort.
- Start fermentation around 48–52°F, then raise for a diacetyl rest near the end of primary fermentation.
- Lager cold for 4–8 weeks after fermentation. Doppelbock improves significantly with time.
- Use gravity readings, not airlock activity alone, to confirm fermentation and packaging readiness.

Does this kit need an ice pack?
No. Both updated Doppelbock versions use dry Fermentis SafLager W-34/70 yeast, so liquid yeast cold shipping protection is not required.
Can I ferment this warm?
For best Doppelbock quality, keep the first stage cool. Warm fermentation can make a strong lager taste fruity, solvent-like, sulfur-heavy, or rough.
How long does Doppelbock take?
Plan on primary fermentation, a diacetyl rest, then 4–8 weeks of lagering. It is slower than most ales, but the extra time is what makes the beer smooth.
