Cloudline Hefeweizen All-Grain Recipe Kit for Soft Haze, Pillowy Foam, and Classic Wheat Beer Character
Cloudline Hefeweizen is a refreshing 5 gallon all-grain wheat beer kit built around soft haze, pillowy foam, gentle bitterness, and expressive wheat beer yeast character. It is designed for brewers who want the classic Bavarian-style hefeweizen profile: soft bread-like grain, lively carbonation, and the familiar banana, clove, and light spice notes that come from fermentation rather than hops.
This all-grain version uses a simple 50% wheat grist with Weyermann Pilsner malt and Weyermann Pale Wheat malt, supported by rice hulls to help the mash lauter more smoothly. Hallertau Mittelfrüh provides restrained noble-hop bitterness, while LalBrew Munich Classic brings the expressive dry wheat beer yeast character that fits the style well and ships more reliably than liquid yeast.

Fermentation Requirements
Recommended fermentation temperature: 64–72°F. Fermenting in the mid-to-upper 60s gives balanced wheat-beer character; warmer fermentation can increase banana/clove intensity.

Flavor and Brewing Character
Cloudline is designed to pour hazy gold with a soft body, high foam, and a lively wheat-beer finish. The malt profile should stay gentle and bready, not sweet or heavy. The hop character is intentionally low so the yeast can lead with the banana, clove, and spice notes that define the style.
Why Brewers Choose the All-Grain Version
The all-grain version gives you full control over the mash, which matters for a wheat-heavy beer. A balanced mash schedule, careful runoff, and proper fermentation temperature help preserve the soft body and expressive yeast profile without making the beer heavy. Rice hulls are included because a 50% wheat grist can be slower to lauter than an all-barley grist.
Default grain handling: All-grain recipe kits are milled by default, and the grains are packed together in a single bag unless a listing or order note says otherwise.
Brewing Notes
- Use the included rice hulls: They help improve wort flow through the grain bed in this high-wheat mash.
- Keep bitterness restrained: Hefeweizen should be refreshing and yeast-forward, not hop-driven.
- Watch fermentation temperature: Warmer fermentation can push more banana character; cooler fermentation can lean more clove and spice.
- Serve fresh: Wheat beer character is best when the beer is young, lively, and aromatic.
- Plan carbonation separately if bottling: Priming sugar is sold separately.
