How to use BrewTan B
Dose BrewTan B by weight with an accurate gram scale. Do not measure this product by spoon or volume. Slurry or dissolve it in warm brewing water first, then add it slowly while stirring so it disperses evenly and does not clump. Technical guidance from the manufacturer recommends adding BrewTan B solution to mash water before adding malt when using it at mashing-in.
For kettle use, add the BrewTan B slurry before other kettle finings such as Irish moss or Whirlfloc. ATPGroup lists BrewTan B for mash tun iron chelation and kettle fining use.
Supplier dosage guidance varies by application and process. ATPGroup lists BrewTan B at 2-6 ppm for mash tun or kettle use. The Ajinomoto/Natural Specialities mashing-in fact sheet lists typical mashing-in dosage at 1.5-4 g/hL, expressed relative to final 100% malt 12 P beer, with malt quality, adjunct percentage, and beer gravity taken into account.
