Fermax Yeast Nutrient for Beer, Wine, Mead, and Cider

Fermax Yeast Nutrient is a powdered fermentation nutrient used when yeast need more support than the wort, must, or wash can provide on its own. It supplies inorganic nitrogen, phosphates, magnesium, and yeast-derived nutrition for healthier fermentation in beer, wine, mead, cider, and distilling washes.

Use Fermax when fermenting honey, fruit, sugar washes, high-gravity recipes, or other batches where nutrient stress could lead to sluggish fermentation. It is also commonly used when trying to restart a stalled fermentation.

What Fermax contains

  • DAP: diammonium phosphate, a source of yeast-assimilable nitrogen.
  • Dipotassium phosphate: phosphate support for fermentation.
  • Magnesium sulfate: mineral support for yeast metabolism.
  • Yeast extract or autolyzed yeast: amino acids and yeast-derived nutrients.

How much Fermax to use

Supplier guidance commonly lists Fermax at about 1/2 to 1-1/2 teaspoons per gallon, depending on the fermentation. Beer additions are commonly made in the last 10 minutes of the boil. Wine, cider, mead, and other must-based fermentations are typically dosed before or early in fermentation.

Do not overdose yeast nutrient. Too much nutrient can stress the fermentation and contribute to off-flavors. For mead and high-gravity batches, consider a planned nutrient schedule rather than one large addition.

Best uses

  • Traditional mead, melomel, cyser, and other honey fermentations
  • Wine, cider, fruit wine, and nutrient-poor musts
  • High-gravity beer or adjunct-heavy beer where extra yeast nutrition is useful
  • Distilling washes and sugar-based fermentations
  • Restart support for slow or stuck fermentations
