White Labs WLP4650 Metschnikowia reukaufii is a non-Saccharomyces wild yeast known for its strong ester production and aromatic complexity. It’s often used as an initial “aroma booster” in mixed fermentations for beer, cider, and wine. This strain ferments lightly and finishes dry, leaving behind vibrant fruit-forward aromas—think honeysuckle, tropical fruit, and citrus blossom—while allowing follow-up yeast to complete fermentation.
