Wheat and spelt grains add foam stability, soft bready flavor, haze potential, and a rounder mouthfeel. Use them for hefeweizen, witbier, saisons, hazy IPAs, wheat ales, and recipes that need a smoother grain texture.
This collection includes malted wheat, flaked or torrefied wheat, darker wheat malts, roasted wheat, and spelt malt. Wheat and spelt are huskless compared with barley, so larger percentages can make lautering slower. Rice hulls can help the mash drain without changing flavor.
For a full recipe build, pair these grains with a dependable base malt and add rice hulls when the grain bill is heavy on wheat, rye, oats, or other huskless grains.
