Specialty Grains for Flavor, Color, Body, and Texture

Specialty grains are the recipe-shaping grains. They usually make up a smaller part of the grain bill than base malt, but they have a large effect on the finished beer. Use them to add caramel sweetness, biscuit, toast, roast, chocolate, coffee, smoke, grainy dryness, haze, foam, or richer mouthfeel.

If you are building from a recipe, start with the exact malt name when possible. If you are designing your own beer, shop by the effect you want: caramel and crystal for sweetness and color, toasted malts for breadcrust and biscuit, roasted grains for dark beer character, and flaked or unmalted grains for body and texture.
