Salt & Citrus Gose All-grain Recipe Kit for Gose / Sour Wheat Beer Character
Salt & Citrus Gose is a tart wheat beer inspired by the historic German gose tradition associated with Goslar and later Leipzig. This version uses Lallemand Sourvisiae®, a dry yeast that creates lactic acidity during fermentation, so you get the bright sour character of a gose without a separate kettle-souring step or a live Lactobacillus culture.
This all-grain kit is for brewers who want a crisp, tangy 5 gallon batch with citrus-like acidity, soft wheat texture, coriander lift, and a subtle saline snap, but with a cleaner and easier sour-beer workflow. Flavor and Brewing Character
Expect pale color, light haze, clean tartness, soft wheat body, subtle lemony-coriander lift, and a restrained mineral finish. Optional fruit puree can be added after fermentation for a fruited version, but the base beer should be complete on its own.
Fermentation Requirements
- Recommended fermentation range: 59–72°F with Lallemand Sourvisiae; 68–72°F preferred.
- Pitch the full Lallemand Sourvisiae sachet into fully chilled wort; do not pitch into hot wort.
- Use gravity readings, not airlock activity alone, to confirm fermentation is complete.
- Package only after gravity is stable and the beer tastes clean for the style.
- No separate kettle-souring hold is needed; Sourvisiae creates the lactic acidity during fermentation.

- Because this kit does not require live Lactobacillus, it reduces the risk of contaminating clean-side brewing equipment.
- If you have a pH meter or strips, check the finished beer before packaging; target a bright but drinkable acidity.
- Fruit puree may be added after primary fermentation if desired, but fruit is not included unless sold as an add-on.
