Tropical Mist Citrus Blonde Ale Extract Recipe Kit | 5 Gallon

Tropical Mist is a light, citrus-driven blonde ale built for a soft grain profile, restrained bitterness, gentle London Fog yeast character, and fresh Valencia orange added after fermentation. This extract with grains version uses Pilsen Light DME plus a mini-mash of Weyermann® Pilsner, oats, wheat, and acidulated malt to keep the beer pale, refreshing, and expressive without turning it heavy or aggressively hoppy.

Fermentation Requirements

Ferment with White Labs LalBrew New England dry yeast London Fog around 67°F until nearly finished, then raise to about 72°F to finish cleanly. Fresh Valencia orange is added after fermentation; keep sanitation tight and avoid oxygen pickup.

The kit ships with:

  • Briess Pilsen Light DME: 1 × 3 lb bag + 1 × 1 lb bag
  • Weyermann® Pilsner Malt: 16 oz, mini-mash
  • Flaked Oats: 16 oz
  • Rahr Unmalted White Wheat: 16 oz
  • Weyermann® Acidulated Malt: 4 oz
  • CTZ hops: 1 oz
  • White Labs LalBrew New England dry yeast: 1 pack
  • Muslin steeping bag: 1

Important Fresh Orange Note

This recipe uses 1 lb rinsed and macerated Valencia oranges added after fermentation. Fresh oranges are not included in the kit. Cut the fruit into pieces no larger than 1/2 inch, use clean/sanitized tools, and avoid excessive contact time that can create pithy bitterness.

Flavor and Brewing Character

Expect a pale, easy-drinking blonde ale with soft grain texture, low bitterness, light haze, gentle fermentation fruitiness, and fresh citrus character from Valencia orange. CTZ provides balance only; this is not meant to drink like an IPA.

Brewing Notes

  • Keep bitterness restrained: CTZ is used as a small bittering charge only.
  • Respect the fruit addition: Add oranges after fermentation is nearly complete and handle gently.
  • Ferment cool and steady: London Fog should support the citrus profile without becoming rough.
  • Package gently: Oxygen can flatten citrus character quickly.
