Sweet Mead Yeast | Wyeast 4184 Yeast
Wyeast 4184 Sweet Mead Yeast
Wyeast 4184 Sweet Mead is a liquid Saccharomyces cerevisiae strain selected for sweeter, fuller-bodied mead. Wyeast describes it as leaving 2-3% residual sugar in most meads, with a rich, fruity profile that works especially well in fruit mead fermentations.
Choose this strain when the goal is a sweet or semi-sweet mead, melomel, cyser, or other honey-based fermentation where residual sweetness and fruit expression are part of the design. It can also be used in cider and sake-style fermentations when the profile fits the recipe.
Fermentation Profile
- Species: Saccharomyces cerevisiae.
- Temperature range: 65-75°F according to Wyeast.
- Alcohol tolerance: Wyeast lists apparent ABV tolerance at 11%.
- Flocculation: medium.
- Flavor direction: rich and fruity, with residual sweetness in most meads.
Brewing and Meadmaking Notes
Healthy mead fermentation depends on more than yeast choice. Oxygen management, pitching rate, rehydration or smack-pack handling, temperature control, and nutrient timing all matter, especially in honey musts that are naturally low in yeast nutrients. Wyeast recommends using Wyeast Wine Nutrient Blend with this strain.
