W-68 is meant to be expressive. Fermentation temperature, wort composition, pitch rate, and open or closed fermentation choices can all affect the balance of banana ester, clove phenolic, and overall softness. For a classic wheat profile, give the beer enough wheat in the grist, keep oxygen and sanitation tight, and ferment in the recommended range.

For most standard-strength 5 gallon wheat beer batches, one 11.5 g sachet falls within the published dosage range. Storage
Store dry and away from direct heat. For longer storage after arrival, Fermentis recommends controlled cool storage below 59°F. Once opened, reseal the sachet, keep it refrigerated at 39°F or lower, and use it within 7 days.
