Fermentation Requirements

Use a clean, sanitized fermenter with enough headspace. Pitch LalBrew New England into well-aerated wort around 64–68°F, then hold fermentation steady in the mid-to-upper 60s°F. Let the beer finish fully, confirm gravity is stable for 2–3 days, and avoid oxygen pickup during transfer and packaging.

Extract and Steeping-Grain Recipe Note

This version was converted from the earlier partial-mash draft into an extract kit with steeping grains. Briess Golden Light LME and DME provide the fermentable base. Simpsons Golden Naked Oats® supplies steepable oat character, body, and light nutty sweetness without requiring a conversion mash. Use the included large muslin steeping bag for the specialty grains.

Flavor and Brewing Character

Expect dark chocolate, roasted grain, caramel depth, a smooth oat impression, low earthy hop character, and a creamy finish. The goal is rich and rounded, not acrid, syrupy, or overly sweet.
