Cloudline Hefeweizen Extract Recipe Kit for Soft Haze, Pillowy Foam, and Classic Wheat Beer Character
Cloudline Hefeweizen is a refreshing 5 gallon extract wheat beer kit built around soft haze, pillowy foam, gentle bitterness, and expressive wheat beer yeast character. It gives brewers a shorter brew day while keeping the classic Bavarian-style hefeweizen profile: soft grain character, lively carbonation, and the familiar banana, clove, and light bubblegum notes that come from fermentation rather than hops.
This extract version uses Briess CBW Bavarian Wheat Liquid Malt Extract for a dependable wheat-beer base, Hallertau Mittelfrüh for restrained noble-hop bitterness, and LalBrew Munich Classic for the expressive dry wheat beer yeast character that fits the style well and ships more reliably than liquid yeast.
This is the extract version. If you want full mash control, see the Cloudline Hefeweizen all-grain recipe kit.

Grain Milling

Fermentation Requirements
Recommended fermentation temperature: 64–72°F. Fermenting in the mid-to-upper 60s gives balanced wheat-beer character; warmer fermentation can increase banana/clove intensity.
Detailed Kit Contents
The kit ships with:
- Briess CBW® Bavarian Wheat LME | 3.3 lbs: 2
- Hallertau Mittelfrüh Hops - German Grown T-90 Pellets: 2 oz
- LalBrew® Munich Classic Bavarian Wheat Beer Yeast : 11g: 1
Flavor and Brewing Character
Cloudline is designed to pour hazy gold with a soft body, high foam, and a lively wheat-beer finish. The malt character should stay gentle and bready, while the hop character remains low enough for the yeast to lead with banana, clove, light spice, and soft bubblegum notes.
Why Brewers Choose the Extract Version
The extract version keeps the brew day shorter and more approachable while still delivering the core hefeweizen profile. There is no specialty grain steep for this version, so the main priorities are dissolving the extract fully, avoiding scorching, chilling promptly, and fermenting in the right temperature range for balanced banana and clove expression.
Brewing Notes
- Add extract carefully: Remove the kettle from direct heat while stirring in liquid malt extract to reduce scorching risk.
- Keep bitterness restrained: Hefeweizen should be refreshing and yeast-forward, not hop-driven.
- Watch fermentation temperature: Warmer fermentation can push more banana and bubblegum; cooler fermentation can lean more clove and spice.
- Serve fresh: Wheat beer character is best when the beer is young, lively, and aromatic.
- Plan carbonation separately if bottling: Priming sugar is sold separately.
If you are bottle conditioning, you will need to purchase Priming Sugar, sold separately. Use our Priming Sugar Calculator to determine the right amount for your desired carbonation level.
If you are kegging your beer, use our Keg Carbonation Calculator to dial in serving pressure and carbonation level.
