Red Star Premier Rouge is a dry red wine yeast suited to bold, structured fermentations. Formerly known as Pasteur Red, it is commonly used for Cabernet Sauvignon, Cabernet Franc, Merlot, Zinfandel, Syrah, and other red wines where color extraction, mouthfeel, and varietal fruit character matter.

This strain is a good fit when you want a red wine fermentation with steady kinetics and enough structure for oak contact or aging. It can also work in dark fruit wines and meads when you want more body and red-wine style depth instead of a very neutral ferment.
