BrewTan B (Tanal B) Beer Stabilizer

BrewTan B, also listed as Tanal B in supplier catalogs, is a brewing gallotannin / tannic acid process aid for mash and kettle use. Brewers use it to manage haze-active proteins and support beer clarity, flavor stability, and process consistency before fermentation.

What BrewTan B does

BrewTan B reacts with haze-sensitive proteins through adsorption and precipitation. In practical brewing terms, it can help reduce chill haze potential and support colloidal stability when it is used correctly. It is also used for iron chelation in mash or kettle applications, which supports stability-focused brewing process control.

  • Gallotannin brewing additive for mash tun or kettle use
  • Helps reduce haze-forming protein load before fermentation
  • Supports clarity and flavor-stability-focused process control
  • Can be used as an iron chelator in the mash or as a kettle fining aid
  • Useful for brewers working on bright lagers, packaged beer, and repeatable process control

How to use BrewTan B

Dose BrewTan B by weight with an accurate gram scale. Do not measure this product by spoon or volume. Slurry or dissolve it in warm brewing water first, then add it slowly while stirring so it disperses evenly and does not clump. Technical guidance from the manufacturer recommends adding BrewTan B solution to mash water before adding malt when using it at mashing-in.

For kettle use, add the BrewTan B slurry before other kettle finings such as Irish moss or Whirlfloc. ATPGroup lists BrewTan B for mash tun iron chelation and kettle fining use.

Supplier dosage guidance varies by application and process. ATPGroup lists BrewTan B at 2-6 ppm for mash tun or kettle use. The Ajinomoto/Natural Specialities mashing-in fact sheet lists typical mashing-in dosage at 1.5-4 g/hL, expressed relative to final 100% malt 12 P beer, with malt quality, adjunct percentage, and beer gravity taken into account. Use the technical sheet and your brewhouse goals to choose the correct dose.

Style and process notes

BrewTan B is most at home in beers where clarity, flavor stability, and clean process control matter. Use extra caution with hazy IPAs, wheat beers, and other intentionally cloudy styles. Standard dosing may reduce haze-active material that those beers rely on for appearance and texture.

Product details

  • Product: BrewTan B, also listed as Tanal B
  • Type: brewing gallotannin / tannic acid process aid
  • Common use: mash tun iron chelation, kettle fining, haze and flavor stability support
  • Form: light yellow granular powder
  • Chemical description: polygalloyl glucoses, hydrolysable tannic acid
  • Sizes: 1 oz and 1 lb

Storage and handling

Keep BrewTan B sealed, dry, and protected from moisture. Because the dosing range is small, use a scale that can measure accurately in fractions of a gram. Stainless steel equipment is preferred when preparing and using gallotannin solutions because dissolved iron can form dark complexes with tannic acid.
