Brewing grains are the base of all-grain and partial-mash beer recipes. Base malts provide most of the fermentable extract. Specialty malts, roasted grains, caramel and crystal malts, wheat, oats, rye, and flaked adjuncts shape the color, body, foam, mouthfeel, aroma, and malt flavor of the finished beer.

Choose grains by recipe role first. A grain bill usually starts with a suitable base malt, then adds specialty grains for style character. Small changes in roast level, color, maltster, and adjunct choice can change the beer more than the ingredient list suggests, so build the recipe around a clear flavor and process target.

Build a better grain bill

• Base malt: choose the main malt around style, extract potential, color, and malt character.
• Specialty malt: add color, toast, caramel, roast, body, or foam support with a specific purpose.
• Adjunct grains: use flaked or unmalted grains when the beer needs body, haze, head retention, or a grain-specific flavor.
• Mash planning: account for crush, lautering, enzyme strength, and special handling where the grain bill requires it.
