Sunbreak Premium Light Lager is for brewers who want a clean, familiar American-style lager that still tastes intentionally brewed. Premium light lager grew out of the broader American adjunct-lager tradition: pale malt, a light corn contribution, restrained hops, and a crisp finish built for refreshment rather than intensity.

Flavor and Brewing Character
Expect very pale color, light grain sweetness, a faint corn softness, low bitterness, and a crisp finish. This is not an aggressively hopped beer; the challenge and reward are clean fermentation, good clarification, and a smooth lager-like profile.
Fermentation Requirements
- Recommended fermentation range: 50–58°F with lager yeast; 58–64°F with a clean hybrid yeast.
- Pitch healthy yeast into fully chilled wort; do not pitch into hot wort.
- Use gravity readings, not airlock activity alone, to confirm fermentation is complete.
- Package only after gravity is stable and the beer tastes clean for the style.
- Plan for a diacetyl rest near the end of fermentation if using lager yeast, followed by cold conditioning when possible.
