The Apprentice IPA is a dry, hop-forward American IPA built around firm bitterness, clean fermentation, and layered American hop character. Chinook drives the boil profile, while Amarillo, Simcoe, Centennial, and CTZ build citrus, pine, resin, grapefruit, and dank dry-hop aroma.

Fermentation Requirements

Ferment with SafAle US-05 around 68°F for a clean American ale profile. The source recipe calls for a WLP001-style California Ale profile; US-05 is used here as a clean dry-yeast option. Keep fermentation steady and avoid oxygen exposure after fermentation begins.

Flavor and Brewing Character

Expect a firm, bitter, dry-finishing IPA with clean malt support and expressive citrus, pine, resin, grapefruit, and dank hop character. The malt bill keeps body and color in check so the hop schedule can stay assertive without becoming sweet or heavy.

Brewing Notes

  • Mash at 152°F: This supports a dryish IPA finish with enough structure.
  • Use the 90 minute boil: The source recipe is built around this boil length.
  • Dry hop after fermentation slows: Add 2 oz CTZ, 1.5 oz Amarillo, and 1.5 oz Simcoe for 6 days.
  • Limit oxygen: IPA aroma fades quickly with rough transfers or splashing.
