Helles Window Munich Helles All-Grain Recipe Kit for a Smooth Pale German Lager

Helles Window Munich Helles is a 5 gallon all-grain recipe kit for brewers who want a clean, pale, malt-forward lager with soft bitterness and classic German drinkability. It is built to showcase restraint: gentle bread-cracker malt, a light golden color, restrained noble-hop balance, and a smooth finish.

This is a great recipe for brewers who want to move beyond hop-heavy ales and learn how clean fermentation, fresh ingredients, and careful packaging shape a delicate beer. Helles is not designed to hide mistakes behind dark malt or aggressive hops, which makes it one of the most rewarding styles to brew well.

This is the all-grain version. If you prefer the other brew-day format, see the Helles Window Munich Helles extract recipe kit.

Why Brewers Choose This Beer

Brewers choose Munich Helles when they want a beer that is approachable for almost everyone but still technically satisfying. It is clean enough for lager drinkers, flavorful enough for craft beer drinkers, and useful for learning temperature control, yeast management, and oxygen-conscious packaging.

Grain Milling

We automatically mill the grains included with SoCal Brewing Supply beer recipe kits so they are ready for brew day. If you want the grains left unmilled, please add that request in the shopping cart notes before checkout. We’ll do our best to support unmilled requests when packing your order.

Fermentation Requirements

This is a lager recipe kit and requires fermentation temperature control for best results. Pitch the yeast around 48–52°F, ferment around 50–54°F, then raise to 60–62°F for 2–3 days for a diacetyl rest before cold conditioning around 34–38°F. If you cannot keep the beer cool during active fermentation, this kit may not be the best choice right now; an ale recipe kit will be more forgiving at typical room temperatures.

Detailed Kit Contents

  • Weyermann® Barke® Pilsner Malt: 9 lb / 144 oz
  • Weyermann® Munich Type 1 Malt: 8 oz
  • Weyermann® Vienna Malt: 8 oz
  • Hallertau Mittelfrüh hops: 1 oz
  • Fermentis SafLager W-34/70 dry lager yeast: 2 × 11.5 g packets

Flavor and Brewing Character

Expect a bright pale-gold lager with soft malt sweetness, light bread crust, subtle floral-spicy hop balance, and a clean finish. The beer should feel smooth and polished rather than bitter, heavy, or sweet.

Why Brewers Choose the All-Grain Version

The all-grain version is best if you want full mash control over fermentability, body, and pale malt expression.

Default grain handling: All-grain recipe kits are milled by default, and the grains are packed together in a single bag unless a listing or order note says otherwise.

Brewing Notes

  • Temperature matters: Helles rewards cool, steady fermentation.
  • Keep hops restrained: bitterness should support the malt, not dominate it.
  • Protect from oxygen: pale lagers can show oxidation quickly.
  • Plan carbonation separately if bottling: priming sugar is sold separately.

If you are bottle conditioning, you will need to purchase Powdered Dextrose Priming Sugar, sold separately. Use our Priming Sugar Calculator to determine the right amount for your finished volume and desired carbonation level.

If you are kegging your beer, use our Keg Carbonation Calculator to dial in serving pressure and carbonation level.
