CellarScience® CALI Dry Yeast is a clean American ale yeast in a 15 g dry sachet. It is the dependable choice when you want fermentation to stay out of the way so malt, hops, and recipe design can lead.

CALI fits the same general brewing role as classic American ale strains such as WLP001, WY1056, and SafAle US-05. It works well for West Coast IPA, American pale ale, blonde ale, cream ale, amber ale, porter, stout, and other beers that need a neutral fermentation profile with solid attenuation.

How to use CALI dry yeast

One 15 g sachet is intended for a typical 5-6 gallon batch. For most standard-strength beers, sprinkle the yeast directly onto cooled wort. Rehydration is optional, but it can be useful for higher-gravity beers or when you want the most controlled pitch possible.

If rehydrating, use sanitized equipment and sterile water around 85-95°F (29-35°C), then temper the slurry with small amounts of wort before pitching so the temperature difference is not extreme.

Storage

Store sealed dry yeast in a cool, dry place. Refrigeration is recommended for best long-term viability and shelf life.
