Aye of the Storm Scottish Wee Heavy | All-grain Recipe Kit | 5 Gallons
The all-grain Aye of the Storm Scottish Wee Heavy recipe kit gives mash brewers a malt-forward strong Scotch ale built around Golden Promise malt, restrained East Kent Golding bitterness, layered specialty malts, and Scottish ale yeast. It is designed to hit the same strong, rich target as the corrected extract version while giving all-grain brewers full control over mash profile and fermentability.
This is the all-grain version of Aye of the Storm Scottish Wee Heavy. If you want a brewer-friendly shorter-format brew day with malt extract handling instead of a full mash, see the Aye of the Storm Scottish Wee Heavy | Extract Recipe Kit | 5 Gallons.

Grain Milling

Fermentation Requirements
Use a clean, sanitized fermenter with enough headspace for active fermentation. Keep fermentation temperature steady, confirm final gravity before packaging, and avoid oxygen pickup during transfers.

All-grain Recipe Note
This version uses Golden Promise as the base malt for a round, bready, British-style malt character. Dextrose is included to help reach the intended gravity while keeping the finish from becoming overly heavy.
Flavor and Brewing Character
Expect deep malt richness, caramel, toast, honeyed malt depth, subtle dark-fruit complexity, low earthy hop character, and a smooth warming finish. Strong Scottish ales reward careful fermentation and patience.
