Calcium Sulfate (Gypsum) for Brewing Water Adjustment

Calcium sulfate, commonly called gypsum, is a brewing water salt used to add calcium and sulfate to mash or brewing liquor. Brewers use it when the water profile needs more sulfate-driven dryness, firmer hop bitterness, or additional calcium for the mash and fermentation process.

The Oxford Companion to Beer describes calcium sulfate as one of the primary salts used to improve calcium levels in beer. Its sulfate ion is generally associated with a drier, more bitter beer profile, which is why gypsum is common in pale ale, IPA, bitter, and other hop-forward water profiles.

What gypsum adds
