Still Spirits Distiller’s Enzyme Glucoamylase is a fungal-derived enzyme designed to break down dextrins into simple, fermentable sugars. This process enhances alcohol yield and fermentation efficiency, making it ideal for starch-based substrates such as raw grains, potatoes, and malted grains.
Key Features:
- Efficient Conversion: Breaks down complex carbohydrates into fermentable sugars.
- Versatile Use: Suitable for mashing raw grains, potatoes, and malted grains.
- Optimal Conditions: Functions best at 50–60°C (122–140°F) with a pH of 4.0–4.5.
- Batch Size: One 12g packet treats up to 25L (6.6 US Gal) of wash.
Usage Instructions:
- Add enzyme to liquefied starch slurry or malted grain mash once temperature is below 65°C (149°F).
- Stir well, cover, and maintain at 50–60°C (122–140°F) for 1 hour before cooling for fermentation.
- Alternatively, add to mash/wort along with yeast and ferment at 30–35°C (86–95°F), ensuring compatibility with yeast temperature tolerance.
