Liquefy Starch for Efficient Fermentation
Still Spirits Distiller’s Enzyme Alpha-Amylase is a high-temperature, bacterially-derived enzyme designed to break down gelatinized starches into dextrins and simple sugars during mashing. This process enhances the efficiency of fermentation, making it ideal for use with starch-based substrates such as grains, potatoes, and rice.
Key Features:
- High-Temperature Tolerance: Effective in the 65–80°C (149–176°F) range, with optimal activity between 70–75°C (158–167°F).
- Versatile Application: Suitable for use with various starch-based substrates, including grains and potatoes.
- Efficient Conversion: Breaks down complex starches into fermentable sugars, improving alcohol yield.
- Batch Size: One 12g packet is sufficient for up to 25L (6.6 US Gal) of wash or up to 7.5 kg (16.5 lb) of liquefied starch.
Usage Instructions:
- Bring your starch substrate slurry to a boil and simmer for 30 minutes to gelatinize the starches.
- Turn off the heat and allow the mixture to cool to 80°C (176°F) or just below.
- Add the enzyme and stir well to ensure even distribution.
- Cover the mixture and maintain at 65–80°C (149–176°F) for 60 minutes to allow the enzyme to break down the starches.
