Perfect Yeast for Authentic Belgian Ales

LalBrew® Abbaye is a top-fermenting ale yeast of Belgian origin, meticulously selected for its proficiency in fermenting a wide range of Belgian-style beers, from low to high alcohol content. It imparts the quintessential spicy and fruity notes characteristic of Belgian and Trappist ales. At higher fermentation temperatures, it produces tropical, spicy, and banana-like flavors and aromas, while lower temperatures yield darker fruit profiles such as raisin, date, and fig. This versatility makes it ideal for brewing various Belgian styles, including Belgian White, Blonde, Golden, Dubbel, Tripel, and Quad.

This 11g sachet is designed to ferment up to 6 gallons (23 liters) of wort, making it perfect for homebrewers.

  • Alcohol Tolerance: Up to 14% ABV
  • Fermentation Temperature Range: 17°C – 25°C (63°F – 77°F)

Usage Instructions:

  • Pitching Rate: 50 – 100 g/hL to achieve a minimum of 2.5 – 5 million cells/mL
  • Rehydration: Rehydration of LalBrew® Abbaye is recommended to reduce osmotic stress on the yeast. Sprinkle the yeast on the surface of 10 times its weight in clean, sterilized water at 30°C – 35°C (86°F – 95°F). Leave undisturbed for 15 minutes, then stir to suspend completely. Adjust the temperature to that of the wort and inoculate without delay.

Storage:

  • Store in a vacuum-sealed package in dry conditions below 4°C (39°F). Opened packs must be re-sealed, stored in dry conditions below 4°C (39°F), and used within 3 days. Do not use yeast after the expiry date printed on the pack.

Enhance Your Brewing Process

Pair LalBrew® Abbaye with White Labs Brewzyme to eliminate diacetyl and ensure a clean, professional-quality finish. For optimal yeast health, use White Labs Zinc Buddy to promote vigorous and consistent fermentation.

Our Commitment to Yeast Health

At SoCal Brewing Supply, we take yeast storage and viability very seriously (Yes, even Dry yeasts). We ensure yeast is always stored under optimal conditions, with 24-hour monitoring of refrigerator temperatures to prevent spikes that could negatively impact yeast health.

For Dry yeast shipments, we offer ice packs and insulated envelopes as an optional add-on for customers looking for extra protection during hotter months. It’s normal for ice packs to melt during transit; their purpose is to protect the yeast from extreme temperatures caused by external weather conditions.
