Bring Out Fresh, Fruity Flavors with Fresh Strain Yeast

The CellarScience Fresh Strain is the go-to yeast for crafting fruit-forward wines, ciders, and rosés. As its name suggests, Fresh emphasizes bright, fresh fruit aromas and flavors, making it the ideal choice for fermenting fruit-driven whites, ciders, and meads. This Bayanus strain is known for its ability to ferment at cooler temperatures, helping to produce clean, vibrant, and focused fruit profiles with strong stone fruit notes.

Fresh Strain is also a strong fermenter, with low nutrient demands and an impressive alcohol tolerance up to 16%. Once it starts fermenting, it doesn’t stop, making it an easy strain to work with, even for novice winemakers. Many cider producers love this yeast for its ability to highlight fresh and fruity flavors while keeping the fermentation clean and smooth.

Why Choose Fresh Strain?

The Fresh Strain is designed to enhance the fruity, fresh characteristics of your wines and ciders. Its ability to ferment at cooler temperatures makes it perfect for winemakers looking to retain clean and focused fruit flavors. With low nitrogen demands, it’s a breeze to ferment, but for the best results, we recommend following our CellarScience nutrient regimenof FermStart, FermFed DAP Free, and FermFed to enhance fruit and floral flavors while avoiding any off-flavors like H2S.

How to Use Fresh Strain Yeast

Proper hydration is crucial for a healthy fermentation. For every gram of yeast, mix 0.25 g of FermStart yeast nutrient with 25 ml of sterilized water between 104–106°F. Allow the yeast to sit for 15 minutes before gently stirring. Then, add 25 ml of must for each gram of yeast to the slurry and allow it to stand for an additional 15–20 minutes before pitching into your fermenter.

For best results, follow a nutrient schedule by adding 1.5 g of FermFed DAP Free per gallon at the onset of fermentation, followed by 1 g of FermFed per gallon after 1/3 sugar depletion.
