Cashmere Hops for Soft Fruit, Grapefruit, and Smooth Modern Hop Character

Cashmere is a modern U.S. hop variety offered here in T-90 pellets, developed by Washington State University and released in 2013. As a daughter of Cascade with Northern Brewer germplasm on the male side, it carries some familiar American citrus structure, but Cashmere is better known for a softer, rounder profile that can bring berry, grapefruit, stone fruit, and herbal notes without the sharper edge that some more aggressive U.S. hops deliver. The live flavor and aroma profile also includes Lemon, Lime, Melon.

That balance is a big part of the appeal. Cashmere can contribute fruit-forward aroma and useful bitterness, but it usually reads smoother and less abrasive than high-impact resinous varieties. For brewers who want modern hop character with a more polished feel, it is an easy hop to build around.

Flavor and Brewing Character

Cashmere is most often associated with berry and grapefruit, supported by grassy, herbal, and stone-fruit notes. Depending on crop year and process, it can lean either more citrus-forward or more soft-fruit-forward, which makes it flexible across a wide range of beer styles. Its moderate to moderately high alpha-acid range also lets it work as a dual-purpose hop, so it is not limited to only late-hop use.

In the brewhouse, Cashmere works well for smooth bittering, late-kettle additions, whirlpool use, and dry hopping. It is a strong fit for pale ale, IPA, hazy IPA, blonde ale, saison, and wheat beer, especially when you want hop expression that feels bright and modern without turning harsh. It can also layer nicely with varieties like Cascade, Centennial, or Citra when you want to combine softer fruit with firmer citrus lift or more saturated tropical intensity.

Why Brewers Choose Cashmere

Brewers usually choose Cashmere when they want a hop that can cover both bitterness and aroma while keeping the finished beer approachable. It is especially useful in recipes that need berry and grapefruit character, gentler hop texture, or a modern American profile that does not come across as overly sharp, dank, or resin-heavy. If the goal is expressive fruit character with smoother edges, Cashmere earns its place quickly.
