Anchovy Hops for Watermelon, Raspberry, and Pine
Anchovy hops are U.S.-grown T-90 pellets from Segal Ranch in the lower Yakima Valley. The variety was known as 24B-05 before being named Anchovy by Matt Storm and Brian Strumke of Fast Fashion Brewing. The name is unusual, but the hop is not savory or fish-like; supplier notes describe watermelon hard candy, raspberry, and pine.
Use Anchovy when you want a newer American hop with sweet fruit, berry, and resinous structure. It is a strong candidate for pilot batches, hazy IPA, West Coast IPA, pale ale, and other beers where a distinctive whirlpool or dry-hop profile is part of the point.

How to use Anchovy hops
For the clearest expression, use Anchovy in the whirlpool or dry hop where its sweet fruit and pine notes can come through. It can also contribute bitterness earlier in the boil, but most brewers will get more value from it as a flavor and aroma hop.
