Wyeast 3763 Roeselare Ale Blend Yeast is a mixed culture blend combining a Belgian-style ale strain, a Sherry strain, two Brettanomyces strains, and a blend of Lactobacillus and Pediococcus bacteria. Designed to replicate the classic profile of Belgian-style sour reds and browns like Flanders Red, this strain delivers a complex mix of tartness, fruit, earthiness, and funk over time.

Expect moderate attenuation and a very low final gravity as the bacteria and Brettanomyces continue to ferment long after primary yeast activity slows. This strain is ideal for extended aging in glass, stainless, or barrels. Patience is rewarded—flavors evolve beautifully over months, with layers of cherry, plum, and subtle barnyard coming into focus.
