Unlike most traditional lager strains, S-23 is known for its ability to produce noticeable fruity esters, making it ideal for crafting more expressive and characterful lagers. Expect subtle fruitiness balanced with a clean finish and good body retention.

Fermentation & Usage Tips
- Direct pitch: E2U™ certified—ready to pitch directly into wort with no rehydration required.
- Optional rehydration: Rehydrate in 10× its weight in sterile water at 77–84°F (25–29°C) for 15–30 minutes before pitching.
- Dosage: 80 – 120 g/hL; one 11.5 g sachet treats 5 gallons of wort.
- Fermentation temp: For cleanest results, ferment at lower end of range (53–57°F); for esters, try 58–64°F.
Handling & Storage
Store in a dry environment below 59°F (15°C). Refrigeration is best for long-term freshness. Shelf life is 36 months from production. Reseal and refrigerate after opening.
