Diammonium Phosphate (DAP) Yeast Nutrient - 2 oz

Diammonium phosphate, usually called DAP, is an inorganic nitrogen source used in fermentation nutrient plans. Scott Labs describes DAP as a source of inorganic nitrogen that should be used only when needed and in combination with complex nutrients.

DAP can be useful in wine, cider, mead, fruit wine, and other fermentations when the recipe or nutrient plan specifically calls for inorganic nitrogen. If a fermentation is slow, diagnose the cause before adding more nutrient.

How to use DAP

Use DAP according to your recipe, nutrient calculator, or YAN target. Scott Labs recommends suspending DAP in water, juice, or must and mixing well before adding, especially during active fermentation, to avoid sudden CO2 release and foaming.

When DAP makes sense

  • Low-nitrogen must, juice, cider, or mead when your nutrient plan calls for inorganic nitrogen
  • Fermentations where DAP is used alongside a complex nutrient rather than alone
  • Recipes that specify DAP by weight or by a measured nutrient schedule

DAP vs. complex nutrients

DAP supplies inorganic nitrogen. Complex nutrients such as Fermaid K include DAP plus yeast-derived nutrition, while Fermaid O is a DAP-free yeast autolysate nutrient. For yeast rehydration, use Go-Ferm Protect instead of DAP.

Storage

Store DAP sealed in a cool, dry place. Keep the bag tightly closed after opening.
