Bright, Fruity Ciders with a Clean, Refreshing Finish

Mangrove Jack’s M02 Cider Yeast is a high-performing strain specifically developed for crafting crisp, vibrant ciders with a fresh apple character. Designed to ferment cleanly while enhancing fruit-forward notes, M02 preserves delicate esters and allows the natural flavor of your apple juice or cider base to shine. It leaves just enough residual sweetness for a balanced finish, making it perfect for a variety of cider styles from dry to off-dry.

With high flocculation and a smooth, even fermentation curve, M02 is extremely user-friendly—great for beginners and seasoned cider-makers alike. It performs best in cooler fermentations and is known for delivering brilliant clarity without the need for aggressive fining or filtration.

Key Characteristics

  • Yeast Type: Dry cider yeast (top-fermenting)
  • Fermentation Temperature Range: 54–82°F (12–24°C)
  • Attenuation: 95% - 100% (can ferment most sugars for dry or semi-dry results)
  • Flocculation: Very High
  • Alcohol Tolerance: Up to 9%
  • Flavor Profile: Clean, crisp, and fruity with light esters and fresh apple expression

Fermentation Applications

M02 is ideal for fermenting fresh apple juice, concentrate-based cider kits, or fruit-blended ciders. It works well across a range of cider styles including:

  • Traditional dry and semi-dry ciders
  • Modern sweet or flavored ciders
  • Carbonated or bottle-conditioned ciders

Its high flocculation makes it excellent for still or sparkling cider with minimal haze, and it's a go-to strain for both commercial cideries and home fermenters.
