Originally believed to be a Brettanomyces yeast, White Labs WLP644 Saccharomyces brux-like Trois has been reclassified as a pure Saccharomyces strain. What hasn’t changed is its incredible ability to produce bright, tropical fruit character and a soft, juicy mouthfeel that brewers love in modern IPAs, saisons, and specialty ales.

This yeast offers low phenolic expression, meaning it ferments clean without spicy or clove-like notes, while delivering layers of pineapple, mango, and guava aromas. It performs best with a free-rise fermentation and plenty of oxygenation, enhancing ester production and creating expressive, fruit-forward beers.
