Flavor & Aroma Profile

Fermentis SafAle BE-256 is a robust, top-fermenting Belgian yeast strain selected for its ability to ferment high-gravity worts while producing classic Belgian-style flavor complexity. Expect a well-rounded balance of fruity esters (banana, raisin, fig) and light phenolics (clove, pepper), with a smooth mouthfeel and great clarity. Its high flocculation makes for easy clearing after fermentation.

Fermentation & Usage Tips

  • Direct pitch: E2U™ certified—no rehydration needed. Sprinkle directly into wort.
  • Optional rehydration: Rehydrate in 10× its weight of sterile water at 77–84°F (25–29°C).
  • Dosage: 50–80 g/hL; one 11.5 g sachet is ideal for 5–6 gallons of wort.
  • Fermentation temp: Use the upper end of the range for more ester expression; lower for cleaner results.

Handling & Storage

Store in a cool, dry place below 59°F (15°C). Refrigeration is recommended for long-term storage. Shelf life is 36 months from production date. Reseal and refrigerate opened sachets promptly.

Our Yeast Handling Commitment

We store all yeast in temperature-controlled refrigerators with 24/7 monitoring. Optional ice packs are available at checkout to help reduce temperature shock in transit. Melted packs are expected and serve to buffer heat exposure—not maintain cold during shipping.
