Go-Ferm Protect is a natural yeast rehydration nutrient developed by Lallemand to enhance yeast viability and vitality during fermentation. By incorporating sterols, unsaturated fatty acids, vitamins, and minerals into the rehydration water, it strengthens yeast cell membranes, making them more resilient to fermentation stresses such as high sugar concentrations, ethanol toxicity, and temperature fluctuations. This process, known as NATSTEP (NATural STErol Protection), ensures a healthier yeast population, reducing the risk of sluggish or stuck fermentations.
